Sometimes, cooking can seem daunting to those with little experience. I challeneged myself to make a full, healthy dinner in under an hour and here’s how I did it!
The prize jewel of this meal is the stuffed peppers. To prepare, you need (you guessed it) some large bell peppers! Wash and prepare as few or as many as you like, I personally made four as meal prep for the rest of the week. After you wash the peppers, cut off the tops and gut the seeds so you have an open boat. Set those aside and preheat your oven to 425 degrees while you prepare the filling.
For the inside of the peppers, I cooked some ground beef on the stove at medium heat. Once the meat browned, I dried it, then put it back on the stove on low heat and added some diced onion, water, and taco seasoning. I also added in some corn for the inside of the peppers than used the leftover corn as a side. Fill up your peppers, then throw them in the oven for about 45 minutes.
The other side I prepared was some sweet potato fries. All you have to do is cut up a sweet potato into cubes (which was a lot harder than it sounds) and then toss them in a bowl with a little bit of olive oil, some rosemary, and salt and pepper to your liking. They also cook at 425 for around 15 minutes.
